Depending on how you store the pieces, you can still solder a piece without much trouble many years later.

If they have been allowed to get constant exposure to air and moisture, the metal will get tarnished and you will need a stronger flux to sucessfully solder. Strong fluxes make nasty fumes and are really hard on your skin, so they are not much fun to work with.

If the pieces have been laid out on a board that is contaminated with flux, even a few weeks may find green corrosion that needs to be removed with steel wool. If left in contact with flux for a few months, the copper foil may be comnpletely eaten away by the green corrosion in places and will need to be stripped and re-foiled.
