Grinder bit trouble

I recently bought a Gryphon studio grinder, and am very happy with it. The 1/5-horsepower motor really delivers the goods, and it runs smoothly and quietly.
However, tonight, after just a small amount of grinding, my bit got stripped (a whole swath of the diamond coating came right off.) I adjusted the bit--moved it down a little--to get contact with a fresh band of grinding surface, but the same problem happened after grinding just a few pieces. Initially, my bit might not have been wet enough. However, even with the "cooling tower" totally full of water and water all over the place, I still stripped the bit again. Any idea what's going wrong? Could I just have a defective bit? I'm not pressing too hard and, as I said, am using plenty of water (though no bit lube)... ideas, anyone? Thanks!
